A simple yet elegant recipe transforming humble carrots into a flavorful side dish with honey and thyme.

  • 2 tablespoons of olive oil
  • 2 tablespoons of honey
  • 1 teaspoon of fresh thyme leaves, plus more for garnish
  • Salt and pepper to taste
  • 1 tablespoon of balsamic vinegar (optional)
  • 1 tablespoon of butter (optional for extra richness)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the Carrots: In a large bowl, combine the peeled and cut carrots. Drizzle the olive oil and honey over the carrots, and sprinkle with fresh thyme, salt, and pepper. If using, add the balsamic vinegar for additional flavor.
  3. Toss to Combine: Toss the carrots thoroughly until they are evenly coated with the olive oil and honey mixture.
  4. Arrange the Carrots: Spread the carrots in a single layer on the prepared baking sheet. Ensure there is space between each piece for even roasting.
  5. Roast the Carrots: Roast the carrots in the preheated oven for 20-25 minutes or until they are tender and caramelized. Stir halfway through for even cooking.
  6. Add Butter (Optional): If you chose to use butter, add it to the carrots during the last 5 minutes of roasting for a richer flavor.
  7. Final Touch: Once done, remove the baking sheet from the oven. Taste and adjust seasoning with more salt and pepper, if desired.
