Ingredients

  • 1 packet active dry yeast (about 2 1/4 teaspoons)
  • 1 tbsp sugar
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1/4 cup baking soda
  • 1 large egg (beaten)
  • Coarse sea salt (for sprinkling)

Instructions

  1. Combine warm water, yeast, and sugar in a large bowl. Let it sit until frothy, about 5 minutes.
  2. Mix flour and salt, gradually adding to the dough until a mixture forms. Knead for about 5 minutes until smooth.
  3. Let the dough rise by placing it in a greased bowl, covering it, and letting it rise for 1 hour.
  4. Preheat your oven to 425°F (220°C).
  5. Prepare a baking soda solution by boiling water and stirring in baking soda.
  6. Cut the dough into small pieces, roll them into bites, and dip each in the baking soda solution for 30 seconds.
  7. Arrange the bites on a baking sheet, brush with beaten egg, and sprinkle with coarse salt.
  8. Bake for 12-15 minutes or until golden brown.
  9. Allow to cool slightly before serving.

These bites are perfect with a variety of dips like mustard or cheese sauce.
