A nutritious twist on the classic Tiramisu dessert, this chia pudding combines creamy mascarpone and strong coffee flavors in a guilt-free treat.

Ingredients

  • 3 tablespoons chia seeds
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup mascarpone cheese
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup strong brewed coffee, cooled
  • 1 tablespoon unsweetened cocoa powder
  • Pinch of salt

Instructions

  1. Whisk together the chia seeds, milk, maple syrup, vanilla extract, and a pinch of salt in a bowl until well combined.
  2. Cover the bowl and refrigerate for at least 2 hours or overnight.
  3. Whisk the mascarpone cheese in another bowl until smooth, then gently fold in the cooled brewed coffee.
  4. Divide half of the chia pudding among serving glasses, spooning the coffee-mascarpone mixture on top, followed by adding the remaining chia pudding.
  5. Dust the top layer with unsweetened cocoa powder before serving.

Notes

Chia seeds should be whisked thoroughly to avoid clumping, and mascarpone should be at room temperature for easier mixing.
