A warm and nourishing curry made with tofu, sweet potatoes, and creamy peanut butter, perfect for a comforting meal.

Ingredients

  • 14 ounces firm tofu
  • 1 large sweet potato
  • 1 tablespoon coconut oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons red curry paste
  • 1 can coconut milk
  • 1/2 cup peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 cup vegetable broth
  • 2 cups spinach
  • 1 lime, juiced
  • Salt to taste

Instructions

  1. Press and cube the tofu.
  2. Prepare the sweet potato.
  3. Sauté the aromatics.
  4. Stir in the red curry paste.
  5. Combine the sauces.
  6. Bring to a simmer.
  7. Add sweet potatoes and cook until tender.
  8. Introduce tofu and spinach.
  9. Finish with lime juice.
  10. Season and serve.

Notes

Serve over jasmine rice or quinoa; can customize with additional vegetables.
