Classic Tomato Soup

A warm and comforting tomato soup filled with the aroma of sautéed garlic and onions, perfect for cozy dinners.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.
  2. Add the diced tomatoes (with their juices) and vegetable broth to the pot. Stir in the sugar, and season generously with salt and pepper.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  4. Use an immersion blender to puree the soup until smooth, or carefully transfer the mixture to a blender in batches.
  5. Serve hot, garnished with fresh basil leaves.

Notes

For a chunkier soup, reserve some diced tomatoes before blending. Add a bay leaf for extra flavor during simmering, but remember to remove it before blending or serving.
