A vibrant dish of eggs poached in a spiced tomato sauce, perfect for any meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 ounces) crushed tomatoes
  • Salt and pepper to taste
  • 6 eggs
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add diced onion and red bell pepper, and cook until softened, about 5 minutes.
  2. Stir in minced garlic, cumin, and paprika; cook for another minute until fragrant.
  3. Add crushed tomatoes and season with salt and pepper. Simmer for 10-15 minutes, until the sauce thickens.
  4. Make small wells in the sauce and crack an egg into each well. Cover the skillet and cook until the eggs are set but the yolks are still runny, about 5-8 minutes.
  5. Garnish with fresh parsley or cilantro before serving. Serve hot with crusty bread.
