A light and fluffy Norwegian dessert made with whipped egg whites and berries, perfect for warm days.

Ingredients

  • 1 cup lingonberries (or cranberries)
  • 2 egg whites
  • 1/2 cup sugar
  • 1 teaspoon lemon juice

Instructions

  1. Whip the egg whites until soft peaks form. Gradually add the sugar, continuing to whip until stiff peaks develop.
  2. Mash the lingonberries (or cranberries) in another bowl and mix in the lemon juice.
  3. Fold the berry mixture into the whipped egg whites until fully combined.
  4. Serve immediately or chill in the refrigerator for a while before serving.

Notes

Fresh berries are recommended, but frozen can be used if well-drained. Serve in individual cups with berries and mint for a beautiful presentation.
