Deliciously chewy bars bursting with pineapple flavor and a nutty crunch of coconut, perfect for any occasion.

  • 1 cup all-purpose flour, sifted
  • ½ cup unsweetened shredded coconut
  • ½ cup butter, softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 cup crushed pineapple, drained
  • ½ teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8-inch baking pan or line it with parchment paper.
  3. Cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time, until fully incorporated.
  5. Add the vanilla extract and stir until combined.
  6. Whisk together the sifted flour, baking powder, and shredded coconut in a separate bowl.
  7. Fold the dry ingredients into the butter-sugar mixture, alternating with the crushed pineapple.
  8. Pour the mixture into the prepared baking pan and spread evenly.
  9. Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra coconut flavor, replace half of the crushed pineapple with more shredded coconut. Store bars in an airtight container for up to 5 days at room temperature.
