  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1 cup cooked rice or quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 avocado, diced
  • 1/2 cup shredded cheese
  • Sour cream (optional)
  • Salsa (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Add ground turkey to the skillet and cook until browned, breaking it apart with a spoon.
  3. Stir in the taco seasoning along with a splash of water, mixing well.
  4. Layer in your cooked rice or quinoa as a hearty foundation in serving bowls.
  5. Top the rice with black beans and corn.
  6. Spoon the cooked turkey mixture generously over the layered rice, beans, and corn.
  7. Finish your bowls by topping them off with diced tomatoes, shredded lettuce, diced avocado, and cheese.
  8. Add sour cream and salsa, if desired. Serve immediately.

Notes
