A delightful dish that captures the essence of Tuscan cuisine with flaky salmon in a rich garlic butter sauce, paired with cherry tomatoes and vibrant spinach.

Ingredients

  • 4 salmon fillets
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Melt the butter in a large skillet over medium heat until it begins to bubble softly.
  2. Add the minced garlic and sauté until fragrant.
  3. Cook the cherry tomatoes until they begin to soften and release their juices.
  4. Season the salmon fillets with salt, pepper, and Italian seasoning.
  5. Place the seasoned salmon in the skillet and cook for 4-5 minutes on each side until fully cooked.
  6. Stir in the spinach and cook until wilted.
  7. Garnish with fresh parsley and serve immediately.

Notes
