A vibrant Tuscan Chicken Pasta bursting with flavors of garlic, cherry tomatoes, and creamy Parmesan, perfect for a quick weeknight dinner.

Ingredients

  • 8 oz penne pasta
  • 2 chicken breasts
  • 2 cups cherry tomatoes, halved
  • 3 cups spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. Sear the chicken in a large skillet with olive oil, seasoned with salt and pepper, until golden, about 6-7 minutes per side.
  3. Remove the cooked chicken and let it rest before slicing it into strips.
  4. Sauté the minced garlic in the same skillet until fragrant, about 1 minute.
  5. Add the halved cherry tomatoes and cook until soft.
  6. Stir in the spinach and sauté until wilted.
  7. Pour in the heavy cream and add grated Parmesan, stirring until combined.
  8. Combine the cooked penne pasta and sliced chicken into the sauce, tossing to coat.
  9. Serve warm, garnished with fresh basil.

Notes

For a lighter version, substitute half and half for the heavy cream, or use coconut milk for a dairy-free option.
