A comforting and creamy Tuscan Chicken Pasta topped with juicy chicken and fresh spinach, perfect for weeknight dinners.

  • 2 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown and no longer pink in the center, about 6-7 minutes per side. Remove the chicken from the skillet and let it rest, then slice it.
  3. Add minced garlic to the same skillet and sauté for about 30 seconds. Add cherry tomatoes and cook until they soften, approximately 2-3 minutes.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  5. Add the spinach and cooked pasta to the skillet, tossing to coat everything evenly with the creamy sauce.
  6. Serve the pasta topped with sliced chicken and freshly torn basil for an aromatic finish.

Notes

This pasta dish can be paired with a side salad or garlic bread. It keeps well in the fridge for up to 3 days.
