A comforting and hearty Tuscan White Bean Soup that warms you from the inside out, perfect for chilly weather.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 4 cups chicken or vegetable broth
  • 2 (15-ounce) cans cannellini beans, drained
  • 1 (14.5-ounce) can diced tomatoes with juice
  • 1 bay leaf
  • 2 cups kale or spinach, chopped
  • Salt and pepper, to taste
  • 2 tablespoons lemon juice
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Sauté the onion in olive oil over medium heat until translucent, about 5 minutes.
  2. Add the carrots and celery, sautéing for another 5 minutes until softened.
  3. Stir in the garlic, rosemary, and thyme, cooking for 1 minute until fragrant.
  4. Combine the broth, cannellini beans, diced tomatoes, and bay leaf in the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove the bay leaf, then stir in the greens and let them wilt for 5 minutes.
  7. Season with salt and pepper, then stir in lemon juice before serving.
  8. Serve hot, garnished with Parmesan cheese if desired.

Notes

For added depth, consider using smoked paprika or red pepper flakes. This recipe can be made vegetarian by using vegetable broth and omitting cheese.
