A one-dish meal that captures the flavors of traditional stuffed peppers without the fuss.

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked rice
  • 14 oz diced tomatoes
  • 1 cup tomato sauce
  • 2 bell peppers, diced
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F.
  2. Warm the olive oil in a large skillet over medium heat.
  3. Add the diced onion and minced garlic, sautéing for about 3 minutes.
  4. Cook the ground beef with chili powder, paprika, cumin, salt, and black pepper until browned, about 5-7 minutes.
  5. Stir in the uncooked rice, diced tomatoes, tomato sauce, and diced bell peppers.
  6. Bring the mixture to a simmer, cover, and cook until the rice is tender, about 15-20 minutes.
  7. Transfer the mixture to a baking dish.
  8. Sprinkle the shredded cheddar cheese on top.
  9. Bake for about 10 minutes until the cheese is melted and bubbly.
  10. Garnish with chopped fresh parsley before serving.

Notes

You can substitute ground beef with turkey or a plant-based meat for a lighter option. Feel free to add other veggies such as zucchini or corn!
