A vibrant and creamy vegan cheesecake bar featuring dragon fruit, offering a burst of tropical flavor and a healthy indulgence.

  • 1 cup dragon fruit puree
  • 1 cup cashews, soaked
  • 1/2 cup coconut cream
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/4 cup almond flour
  • 1/4 cup coconut oil, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, blend the rolled oats with almond flour until well combined.
  3. Add melted coconut oil to the mixture and stir until well incorporated.
  4. Press the oat and oil mixture firmly into the bottom of a lined baking pan.
  5. In a blender, combine the soaked cashews, dragon fruit puree, coconut cream, maple syrup, and vanilla extract.
  6. Blend until the mixture is smooth and creamy.
  7. Pour the vibrant filling over the crust in the baking pan and spread it evenly.
  8. Place the pan in the oven and bake for 25-30 minutes or until the filling is set.
  9. Allow the bars to cool at room temperature before refrigerating for at least 4 hours.

Notes

For best results, soak your cashews for at least 4 hours prior to blending and do not skip the chilling time to achieve the perfect texture.
