A delightful Vegan Lamington Tart that combines rich chocolate sponge with shredded coconut, perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup coconut sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup almond milk
  • 1/3 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 1/2 cups shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a tart pan.
  2. Mix the dry ingredients together in a bowl.
  3. Combine the wet ingredients in another bowl and whisk until incorporated.
  4. Pour the wet mixture into the dry ingredients and mix until well combined.
  5. Pour the batter into the prepared tart pan and bake for 25-30 minutes.
  6. Let the tart cool before icing.
  7. Prepare the chocolate icing and spread it over the cooled tart.
  8. Sprinkle shredded coconut on top and let it set before serving.

Notes

Store leftovers in an airtight container for up to 3 days at room temperature or a week in the refrigerator.
