Delicious vegetarian quesadillas filled with sautéed vegetables and melted cheese, perfect for a quick meal or snack.

Ingredients

  • Whole wheat tortillas
  • Sharp cheddar cheese, shredded
  • Red bell pepper, diced
  • Zucchini, diced
  • Mushrooms, sliced
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Heat a drizzle of olive oil in a skillet over medium heat.
  2. Add the diced red bell pepper, zucchini, and sliced mushrooms to the skillet. Sprinkle them with salt and pepper, then sauté until tender—about 5-7 minutes.
  3. Remove the sautéed veggies from the skillet and set them aside.
  4. Place a tortilla back in the skillet and sprinkle half with shredded cheddar cheese. Add sautéed veggies on top, then fold the tortilla in half.
  5. Cook until the tortilla is golden and crisp, and the cheese is melted—about 3-4 minutes per side.
  6. Continue with the remaining tortillas.
  7. Slice the cooked quesadillas into wedges and serve warm.

Notes

Feel free to substitute different vegetables or cheeses to customize your quesadillas. Store leftovers in an airtight container for up to 3 days.
