Fresh and vibrant Vietnamese spring rolls filled with succulent shrimp, crunchy vegetables, and aromatic herbs, perfect for a delightful appetizer or snack.

Ingredients

  • Rice paper wrappers
  • Shrimp (cooked and halved)
  • Vermicelli noodles (cooked)
  • Lettuce leaves (Boston or butter lettuce)
  • Fresh herbs (mint, cilantro, basil)
  • Vegetables (carrots, cucumber, bell pepper)
  • Peanut dipping sauce or hoisin sauce

Instructions

  1. Prepare your ingredients: Gather all your ingredients first. Having your shrimp, vermicelli noodles, vegetables, and herbs ready will streamline your assembly process and set you up for success.
  2. Soak the rice paper: Gently place a rice paper wrapper in a shallow dish of warm water. Let it soak for about 10 seconds or until it becomes soft but still holds its shape. That perfectly softened rice paper is the canvas for your spring rolls!
  3. Lay it flat: Once soaked, carefully lay the rice paper flat on a clean surface. A cutting board works great here.
  4. Assemble your filling: In the center of the rice paper, place a few halved shrimp, a small handful of vermicelli noodles, a few pieces of lettuce, your chosen herbs, and a mix of your vegetables. Don’t overload it; you want your rolls to be easy to wrap!
  5. Fold and roll: Start by folding the sides of the rice paper inwards, then roll from the bottom tightly to enclose all the filling. You want it snug but not too tight, so everything stays in place!
  6. Repeat the process: Continue the process with the remaining ingredients. Each roll can be a bit different based on what you add inside, allowing for fun variations.
  7. Serve with dipping sauce: Arrange your freshly rolled spring rolls on a platter and serve with your choice of peanut dipping sauce or hoisin sauce. The dips bring everything together and are a crowd-pleaser!

Notes

Spring rolls are best enjoyed fresh, but if you have leftovers, store them in an airtight container in the fridge. They can last for up to 2 days.
