  • 2 tbsp lemon juice
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tbsp cornstarch
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cream of tartar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 2 tbsp granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the apple slices with lemon juice, 1/2 cup of sugar, 1 teaspoon of cinnamon, cornstarch, and 1/4 teaspoon of salt.
  3. Carefully transfer the apple mixture to a greased 8-inch baking dish.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, cream of tartar, and 1/4 teaspoon of salt.
  5. Stir the melted butter, 1/2 cup of sugar, egg, vanilla extract, and milk into the flour mixture until just combined.
  6. Drop spoonfuls of the dough evenly over the apple filling.
  7. In a small bowl, mix together 2 tablespoons of sugar and 1 teaspoon of cinnamon.
  8. Sprinkle this mixture generously over the dough.
  9. Bake for 35 to 40 minutes, until the topping is golden brown and the apple filling is bubbling.
  10. Once out of the oven, let the cobbler rest for about 10 minutes before serving.

Notes

For the best flavor, use a mix of sweet and tart apples like Granny Smith and Honeycrisp.
