Ingredients

  • 1 pound imitation crab meat
  • 1 small cucumber
  • 1 medium carrot
  • 2 green onions
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 1 teaspoon Sriracha sauce
  • 1 tablespoon chopped cilantro
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Shred the crab meat into bite-sized pieces and place them into a large mixing bowl.
  2. Prepare the vegetables: peel the carrot and julienne it, slice the cucumber into matchsticks, and thinly slice the green onions.
  3. Whisk together rice vinegar, soy sauce, lime juice, sesame oil, honey, and Sriracha sauce in a small bowl.
  4. Combine the cucumber, carrot, and green onions with the crab meat. Pour the dressing over the top.
  5. Toss all the ingredients gently until evenly coated with the dressing.
  6. Transfer the salad to a serving dish, sprinkle with cilantro and sesame seeds, and season with salt if needed.
  7. Chill in the refrigerator for at least 15 minutes before serving.
