Delightful melt-in-your-mouth cookies infused with zesty lemon flavor, perfect for any occasion.

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus extra for dusting
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and 1/2 cup of powdered sugar together until light and fluffy, about 3-4 minutes.
  3. Add the vanilla extract, lemon zest, and fresh lemon juice, mixing until well combined.
  4. Whisk together the all-purpose flour, salt, and baking soda in a separate bowl.
  5. Combine the dry ingredients into the butter mixture, mixing on low speed until the dough comes together.
  6. Scoop portions of dough and roll them into small balls, placing them on the baking sheet about 2 inches apart.
  7. Flatten each ball with the bottom of a glass or your hand.
  8. Bake for 10-12 minutes, or until the edges are set and the bottoms are lightly golden.
  9. Cool the cookies on the baking sheet for about 5 minutes before transferring them to a wire rack.
  10. Dust with additional powdered sugar after the cookies are completely cooled.

Notes

Store leftovers in an airtight container for up to one week, or freeze for up to three months.
