  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Marinade: In a bowl, combine olive oil, lemon juice, dried oregano, salt, and black pepper.
  2. Marinate the Shrimp: Add the shrimp to the bowl, tossing to coat them evenly in the marinade.
  3. Preheat the Grill: Preheat your grill or grill pan over medium-high heat.
  4. Grill the Shrimp: Place the marinated shrimp on the grill and cook for 2 to 3 minutes per side until they turn opaque and lightly charred.
