A delightful zucchini bread recipe that combines the subtle sweetness of zucchini with warm cinnamon flavors, perfect for breakfast or as a snack.

  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven and prepare the pan: Preheat the oven to 350°F (175°C) and grease a loaf pan generously with oil or cooking spray to prevent sticking.
  2. Combine wet ingredients: In a large bowl, mix together the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract until everything is well combined.
  3. Whisk dry ingredients: In another bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, and salt.
  4. Combine wet and dry mixtures: Gradually add the dry ingredients into the zucchini mixture, stirring gently until just combined.
  5. Add extra flavor: Fold in the chopped nuts and/or chocolate chips if desired.
  6. Transfer to loaf pan: Pour the thick batter into the prepared loaf pan and smooth the top.
  7. Bake to perfection: Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted comes out clean.
  8. Cool down: Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For best results, check the bread at the 60-minute mark to avoid overbaking.
