  • 2 cups grated zucchini
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan to prepare for your batter.
  2. In a large bowl, mix the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract until everything is well combined.
  3. Whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon in another bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fold in the chocolate chips, letting them distribute evenly throughout the batter.
  6. Pour the batter into your prepared loaf pan.
  7. Bake the loaf for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the loaf in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

To keep the bread fresh, wrap it tightly in plastic wrap or foil and store it at room temperature for up to 3 days.
