Ingredients

  • 2 medium zucchinis
  • 1 red bell pepper
  • 1 cup snap peas
  • 2 carrots
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. Spiralize the zucchinis into noodles and set aside.
  2. Slice the bell pepper and carrots into thin strips.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic and sauté for 30 seconds until fragrant.
  5. Stir-fry the carrots, bell pepper, and snap peas for about 3-4 minutes until tender-crisp.
  6. Incorporate the zucchini noodles and soy sauce, tossing everything together and cooking for an additional 2-3 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with sesame seeds.
