A nostalgic homemade version of the beloved Subway Italian Herb and Cheese Bread, featuring a soft interior and a cheesy crust enriched with Italian herbs.

Ingredients

  • 1.5 cups Warm Water (110°F)
  • 1 tablespoon Sugar
  • 2 teaspoons Instant Yeast
  • 4 cups Bread Flour (plus extra for dusting)
  • 2 tablespoons Olive Oil
  • 1.5 teaspoons Salt
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Dried Oregano
  • 1 cup Shredded Cheese (cheddar, mozzarella, or blend)
  • Cornmeal (for dusting, optional)

Instructions

  1. Activate your yeast by gently warming the water until it reaches 110°F, then pouring it into a bowl and adding sugar and yeast. Let it sit until frothy.
  2. Mix the dry ingredients in a separate bowl: bread flour, salt, Italian seasoning, and dried oregano.
  3. Combine the yeast mixture with olive oil and gradually mix in the dry ingredients until a shaggy dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. First rise: shape the dough into a ball, place in a greased bowl, cover with a towel, and let it rise for 1 hour or until doubled.
  6. Prepare for baking by punching down the risen dough, dividing it into two loaves, and placing them on a cornmeal-dusted baking sheet.
  7. Second rise: cover the loaves with a towel and let them rise for 30-40 minutes while preheating the oven to 375°F.
  8. Top the loaves with shredded cheese.
  9. Bake in the preheated oven for 25-30 minutes until golden brown and hollow-sounding when tapped.
  10. Cool the loaves on a wire rack for at least 10 minutes before slicing.

Notes

Can be served for sandwiches or enjoyed with butter or olive oil. Store leftovers in an airtight container for up to 2 days or freeze for up to 3 months.
