Delightful cookies that combine the creamy goodness of cheesecake with the comforting texture of cookies, topped with irresistible salted caramel.

Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup caramel sauce
  • Sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the cream cheese and butter until smooth.
  3. Mix in the brown sugar and granulated sugar until well combined.
  4. Add the egg and vanilla, and mix until smooth.
  5. Whisk together the flour, baking soda, and salt in another bowl. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  6. Swirl in half of the caramel sauce gently into the dough.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Remove from the oven and immediately drizzle the remaining caramel sauce over the warm cookies.
  10. Sprinkle a pinch of sea salt on top of each cookie.
  11. Allow to cool before serving.

Notes

For chewy cookies, take them out of the oven just as the edges turn golden. Store in an airtight container for up to one week or refrigerate for longer freshness.
