Delightful cookies that perfectly balance sweetness and tartness with creamy white chocolate and juicy cherries.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup cherries, pitted and chopped (fresh or canned)
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet ingredients until well combined.
  5. Fold in the white chocolate chips and chopped cherries.
  6. Mix the softened cream cheese with powdered sugar until smooth.
  7. Take a portion of the cookie dough, make an indentation in the center, and place a small amount of the cream cheese mixture inside. Then, cover it with more cookie dough.
  8. Place the cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until lightly golden.
  9. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Use dried cherries for a stronger cherry flavor or add nuts for extra crunch.
